Removing paint - steam???

A couple of days ago I was driving home from work and saw a guy removing paint from a first gen Camaro in his driveway. I assumed he was using Soda blasting or some such thing. Well, I stopped and asked what it was. I was stunned when he explained it was just HOT water. Never heard of this before. It softened the paint really well, and it just came off in large chunks down to bare metal.
What I didn't think to ask about was what he planned to do to prevent rust from forming. Also I know if you use sand to blast with, you must be careful not to overheat any panels and cause it to warp, just wondering how hot it has to get to warp. Next time I see him I will ask.
