There is no legal definition of "new old stock", but it generally
refers to a service part that is no longer available from the OEM.
There is no guarantee that the service part is of the same
configuration as the original part nor is there a guarantee that the
part is not longer available.

There have been many examples of claimed "NOS parts" for Corvetees
that have sold on e-bay for big bucks eventhough they were still
available from GMPD.

NOS is about as meaningful as "number matching" and "all original".
It always pays to do your homework.

NOS stands for Nitrous Oxide Systems. The acronym N02 Refers to the
gas Nitrous Oxide. No2 is compromised of 1 part nitrogen and 2 parts
oxygen which gives N02 the ability to produce more power through
increased oxygen molecules in the combustion chamber. Make sure you
add fuel to that mix otherwise your in for a heap of expensive
receipts. Also, dont attempt to stick your hand (etc) in the flow of
nitrous as its atleast -125* F (instant freezer burn so to speak)

looking for the answer of New Old Stock. As in "NOS steering wheel
for sale."

You are close but have your 2 in the wrong place. Nitrous oxide is
made up of 2 parts nitrogen and one part oxygen (36% oxygen by
weight). During the combustion process in an engine, at about 572
degrees F., nitrous breaks down and releases oxygen. This extra
oxygen creates additional power by allowing more fuel to be burned.
Nitrogen acts to buffer, or dampen the increased cylinder pressures
helping to control the combustion process. Nitrous also has a
tremendous "intercooling" effect by reducing intake charge
temperatures by 60 to 75 degrees F.
