Just completed a dash conversion from a plain jane dash to a full gauge dash from another Monza. Learned a lot. Replaced the clock with an oil pressure gauge. Painted the new black dash firethorn to match the red interior. Came out well. Ask me any questions while it is fresh in my mind.

Nice! The side panels of the console are padded yes? Still, no cup holders though. I am told that a console out of a Blazer will work, havent tried yet. Your dash installation looks truly professional, be proud of it....Peace

When updating to a full gauge package what is needed other than the gauges? Printed circuit connector? Dash wiring harness?

I'm sure the op will respond, but in addition to the whole plastic dash(not just the gauges themselves), and dash harness, you will need to swap out the temp sender on the engine and run a tach wire.
